Day Three

Cashew cream is totally saving me from cheating and eating dairy products, but I’m still missing melted cheese. Today was the first time that I’ve ever had a Mexican meal without cheese or sour cream. The rich, creaminess of guacamole and cashew cream made the meal pop.

 

Breakfast: Oatmeal, cinnamon, applesauce, & almond milk. This was so bland. I added raisins & cardamom.

 

 

Lunch: Turkey panini w/smoked paprika cashew cream, mustard, cucumbers, & pepperoncini. Salad w/olive oil & lemon dressing & Veggie Straws.

 

 

Dinner: Calabacita Taco. Soyrizo, potato, & bell pepper taco. Black bean & guacamole tostada. Side of "sour cream" (cashew cream w/lime, cilantro, salt, & pepper).
